Tex Mex Stir-Fry

INGREDIENTS

1 1/2 onions

3 zucchinis

1 avocado

3 tablespoons extra virgin olive oil, or fat of choice

1 1/2 pounds ground beef

1 1/2 tablespoons taco seasoning

3/4 cup salsa

HOW TO PREPARE

1.Peel and dice onion. Cut zucchini into cubes. Peel, pit, and dice avocado.

2.Heat olive oil over medium-high in a saute pan. Add onion and cook until softened, about 5 minutes. Add zucchini and cook a few minutes more.

3.Add ground beef and taco seasoning to the pan and cook until meat is no longer pink.

4.Remove from heat and top with salsa and avocado. Serve and enjoy!
