Spicy Ground Beef and Butternut Squash

INGREDIENTS

1 1/2 onions

1 1/2 jalapeño peppers

1 small butternut squash

3 tablespoons extra virgin olive oil

2 tablespoons minced garlic

1 tablespoon ground sage

1 1/2 teaspoons sea salt

1 1/2 teaspoons paprika

1 teaspoon cumin

1 teaspoon ground black pepper

1/8 teaspoon nutmeg

1 1/2 pounds ground beef

HOW TO PREPARE

1.Dice onion. Deseed and mince jalapeno pepper. Peel, deseed, and dice squash into small cubes.

2.Heat oil in a saute pan over medium heat.

3.Add onion and jalapeno pepper and cook for 6-7 minutes, or until the onions begin to brown.

4.Add garlic, spices, and ground beef and mix well.

5.Once the beef begins to brown, add butternut squash and mix well.

6.Reduce heat to medium-low and cover with a lid for 10 minutes, or until the butternut squash is cooked through.

7.Serve.
