Blueberry Protein Pudding

It's time for an oatmeal upgrade! Rather than dealing with a blood sugar crash mid-morning from only oatmeal or other carbs for breakfast, add some healthy protein and fat for a well-rounded breakfast to keep your brain fueled and your body fuller longer. Here's a 10-minute recipe for breakfast, lunch, dinner, or anytime!

PREP the night before: Soak the oatmeal (1/2 cup Rolled Oats + 1 cup Water) and let it sit in the fridge overnight... or for two days if you forget or get too busy.

Ingredients:

  • 1/2 cup Rolled Oats

  • 1 cup Water

  • 3 Eggs

  • 1/2 cup Frozen Blueberries (frozen will cool down the oatmeal)

  • 2 tbsp Hemp Hearts

Directions:

  1. Turn on stove top to med-high heat and add soaked oatmeal. Stir occasionally until it starts boiling (around 5 minutes).

  2. When it starts boiling, add 3 eggs and quickly stir in with a fork. Keep stirring quickly (use those arm muscles and don't stop!!) until it's fully cooked and thickened (around 3-4 minutes).

  3. When finished, pour the pudding over frozen blueberries and stir. 

  4. Top with Hemp Hearts.

Note: If you you sweeter, you can always add more fruit.

Additional options: Try substituting blueberries or other frozen berries or frozen red cherries.
