Salmon and Sweet Potatoes

Ingredients (all measurements are approximate)

  • 1 pound fresh Salmon

  • 2 tsp Himalayan Salt

  • 2 tbsp fresh Lemon Juice

  • 1 tbsp Honey

  • 1 tbsp Butter

  • 2 cloves Garlic

  • 2 medium or 1 large Sweet Potato

  • 1 tbsp Olive Oil

Directions

  1. Preheat the oven to 400 degrees and line a baking pan with parchment paper.

  2. Smash the garlic with a knife, dice into small pieces, and set it aside.

  3. Marinate the salmon in 1 tsp of salt and the lemon juice and honey (you can also opt to marinate overnight in the fridge). Let it sit.

  4. Cut the sweet potatoes into cubes 3/4 inches wide.

  5. In a bowl or on the parchment paper on the baking pan, mix together the sweet potatoes, olive oil, 1 tsp of salt, and diced garlic that was previously set aside. Spread evenly on the pan, but make a space in the middle to set the salmon.

  6. Take the salmon that was marinating, cut it in half so there are two pieces, and place with the skin on the bottom in the middle of the pan so they’re surrounded by sweet potatoes.

  7. Take two pieces of butter (approximately 1/2 tbsp each) and place them on each piece of salmon.

  8. Bake at 400 degrees for around 40 minutes.
