Blueberry Fruit Quiche

Servings: 2-4

Ingredients

  • 6 Eggs

  • 2 Bananas

  • 1 tsp Cinnamon

  • 1 tsp Vanilla Extract

  • 1 cup Frozen Blueberries (more or less depending on how full the baking cups are)

Directions

  1. Pre-heat the oven to 375 degrees and prep a 12-cup muffin pan with baking cups or a coating (butter or coconut oil for example) for easy cleanup.

  2. Blend the eggs, bananas, cinnamon, and vanilla extract together until smooth.

  3. Pour this mixture evenly into the 12 muffin baking cups.

  4. Drop frozen blueberries on top.

  5. Bake at 375 degrees for 30 minutes.

  6. When the pan has cooled for a couple of minutes, pull the muffin cups out of the pan and set them on the muffin pan edges/ridges to continue baking with residual heat but to keep them from sweating in the pan.

  7. Eat right away or put in the fridge for later.
