Salmon with Spring Pesto

INGREDIENTS
For the pesto:
1/2 bunch fresh mint leaves
1 bunch fresh parsley
1 lemon
1/2 cup raw pine nuts
1/2 cup extra virgin olive oil
sea salt, to taste
ground black pepper, to taste
For the salmon:
1 teaspoon sea salt, to taste
ground black pepper, to taste
1 pound salmon
3 tablespoons extra virgin olive oil
HOW TO PREPARE
For the pesto: Remove large stems from mint and parsley. Juice the lemon.
In a food processor, process greens, pine nuts, and olive oil until smooth.
Season with sea salt, pepper, and lemon juice to taste.
For the salmon: Generously salt and pepper the skinless side of the salmon.
Heat skillet on medium high. Add olive oil. When oil is shimmering, place salmon filets in pan, skin side up.
Cook for 5 minutes, then flip. Cook 3-5 minutes to desired doneness or until an internal temperature of 145F is reached.
Remove salmon from pan and serve with pesto.
