INGREDIENTS

3 ounces green olives

1/2 cup prune

1 1/2 teaspoons minced garlic

1 pound boneless chicken thighs

1 tablespoon extra virgin olive oil

1/8 cup balsamic vinegar

1/8 cup red wine vinegar

2 ounces capers

1 1/2 teaspoons dried oregano

1 bay leaf

1/2 teaspoon sea salt, to taste

ground black pepper, to taste

HOW TO PREPARE

1.Preheat oven to 350F. Pit green olives and prunes.

2.Combine all ingredients in an oven safe baking dish. Season with sea salt and a few grinds of black pepper. Flip the chicken pieces over a few times to make sure they are coated in the mixture.

3.Bake for 25 minutes or until done, remove from oven and serve. The chicken is done when a meat thermometer is inserted and reads 165F.
