Blueberry Bread (gluten-free)

Dry Ingredients (all measurements are approximate):

  • 2 cups Cassava Flour

  • 1 tsp Baking Soda

  • 1/2 tsp Himalayan Salt

Wet Ingredients:

  • 1/4 cup full fat Coconut Milk

  • 3 tbsp Honey

  • 2 Eggs (room temp)

  • 2 tsp Vanilla Extract

  • 1/2 cup melted Butter or Coconut Oil

Other Ingredients:

  • 1 cup frozen Blueberries

Directions:

  1. Preheat oven to 350 degrees.

  2. Coat an 8x8 baking dish with butter or coconut oil, or use a parchment sheet to prevent sticking.

  3. In a large bowl, whisk together the dry ingredients.

  4. In another bowl, whisk together the wet ingredients, then add the blueberries. Add this mixture to the dry ingredients just until mixed.

  5. Add batter to the baking dish and bake ~ 40 minutes.
