Breakfast Quiche

If cooking/baking overwhelms you, you can opt for just 3 ingredients in this recipe, or add more if you have additional time.
Ingredients
9 large Eggs
1/2 tsp Himalayan Salt and Pepper, to taste
2 cups chopped Vegetables (Options include: tomato, bell pepper, and/or onion)
1 tsp of dried/fresh Seasoning. Options include garlic, basil, oregano, parsley, sage, rosemary, and thyme.
Optional: If you have any already cooked ground beef/turkey or potatoes, you can add those.
Directions
Pre-heat the oven to 375 degrees and prep a 12-cup muffin pan with baking cups or a coating (coconut oil for example) for easy cleanup.
In a large bowl, whisk together the Eggs, Salt, and Pepper. Then, mix in the rest of your ingredients.
Pour mixture into muffin pan and bake for 20-25 minutes, until the eggs are fully cooked. After removing the pan from the oven, allow to cool in the pan for 15 minutes.
Store any leftovers in the fridge and consume within 3 days.
