Trader Joe’s Summer Salad

Here’s the perfect salad that can be turned into a meal by adding your protein of choice like chicken, turkey, steak, or brisket. Many of the ingredients can be found at Trader Joe’s.

Prep Time: 10 minutes

Servings: 4-6

Ingredients (measurements are approximate)

  • 3 Romaine Hearts

  • Bell Peppers (1-2 large or 6 mini-sized)

  • 2 small Persian Cucumbers

  • 2 Tomatoes

  • Optional: manchego cheese (cut into ¼ inch cubes)

Directions

  1. Cut the romaine hearts perpendicularly to the base of the stalk and then layer the remaining ingredients: bell pepper, cucumber, tomato, and optional manchego cheese. 

Salad Dressing: 

  • 1 cup Olive Oil

  • ⅓ cup Apple Cider Vinegar

  • ¼ cup Honey

  • 3-4 tablespoons Fresh Basil

  • 1 small Garlic Clove

Directions: Blend all ingredients until smooth. Shake before serving.
