Trader Joe’s Summer Salad

Here’s the perfect salad that can be turned into a meal by adding your protein of choice like chicken, turkey, steak, or brisket. Many of the ingredients can be found at Trader Joe’s.
Prep Time: 10 minutes
Servings: 4-6
Ingredients (measurements are approximate)
3 Romaine Hearts
Bell Peppers (1-2 large or 6 mini-sized)
2 small Persian Cucumbers
2 Tomatoes
Optional: manchego cheese (cut into ¼ inch cubes)
Directions
Cut the romaine hearts perpendicularly to the base of the stalk and then layer the remaining ingredients: bell pepper, cucumber, tomato, and optional manchego cheese.
Salad Dressing:
1 cup Olive Oil
⅓ cup Apple Cider Vinegar
¼ cup Honey
3-4 tablespoons Fresh Basil
1 small Garlic Clove
Directions: Blend all ingredients until smooth. Shake before serving.
