Paleo Meatloaf

I hear requests all the time for quick meals, and this one is extremely fast to prep for a few days or one day if you're like me and can't eat the same thing for more than 2 or 3 meals...

Servings: 2-4

Prep Time: 10 minutes

Ingredients:

  • 1 lb of ground beef

  • 1 egg

  • 1/4 cup onion, diced

  • 3 cloves garlic, minced

  • 1/4 cup and 1/2 cup 365 Everyday Value, Organic Italian Herb pasta sauce (from Whole Foods)

  • 1/3 cup almond flour

  • 2 tsp and 1 Italian Seasoning

  • 1/4 tsp Himalayan Pink Salt

Directions:

  1. Preheat the oven to 365 degrees.

  2. Mix together the beef, egg, onion, garlic, 1/4 cup pasta sauce, almond flour, 1 tsp Italian seasoning, and 1/4 tsp salt.

  3. Line a loaf pan with parchment paper or lightly grease with avocado oil.

  4. Put the meatloaf mixture in the pan.

  5. Bake for 60 minutes.

  6. When finished baking, take the meatloaf out of the oven and coat the top with the remaining ingredients: a mixture of 1/2 cup pasta sauce and 1/2 tsp Italian seasoning.
