Gluten Free Mediterranean Pizza
By Lydia Wallie, Nutrition Director
Looking for a pizza recipe that takes 3 main ingredients, 5 minutes to prep, 10 minutes to bake and if healthy and yum? Here you go!
Ingredients:
Mikey's Pizza Crust (find it at Sprouts in the frozen section)
Tomato Paste (I subbed 365 Everyday Value brand Tomato Basil sauce from Whole Foods because that's what I had on hand, but FYI it is kind of too watery to use on pizza if you're trying to be a perfectionist with your pizza)
Feta Cheese (Costco has the best Organic Sheep Feta)
Optional: dried oregano, 2 cloves crushed garlic (saute beforehand or it will be spicy), black olives, or your other favorite toppings
Directions:
Preheat the oven to 425 (NOTE: I have a counter top convection oven...so I'm not sure how this will turn out in a regular oven).
Get out your pizza pan, put a sheet of Parchment Paper on it, and put on one of the pizza crusts.
Put the tomato paste or sauce on the crust and top it with feta cheese and other toppings.
Bake for 10 minutes, but maybe more depending on your oven.
