Paleo Pancakes

Have you been searching for the perfect pancake recipe that’s 100% gluten free, Paleo, and has added protein? Here you go!


  • 1/2 cup thick coconut milk

  • 2 pasture-raised eggs

  • 2 tbsp honey

  • 1 tsp vanilla flavoring

  • 1/4 tsp Himalayan salt

  • 2 scoops collagen powder

  • 1/2 cup cassava flour

  • 1/4 tsp baking soda

  • optional: 10 dashes of Ceylon cinnamon

  • butter


  1. Blend the coconut milk, eggs, honey, vanilla, salt, and collagen powder using a blender.

  2. In a separate bowl, mix cassava flour, baking soda, and cinnamon.

  3. Blend the ingredients from Step 1 and Step 2 together.

  4. Use a skillet on low heat with melted butter on it to keep the batter from sticking.

  5. Using about 1/4 cup of batter, pour the mixture on the heated skillet.

Discovering the right time and temperature can take a little time, but with practice, you will be making the perfect pancakes!
